Well, sorry for the noticeable lack of HP content recently, but... does anyone know a good/fast/uncomplicated/cheap/not too bland recipe for macaroni and cheese? The bake/casserole version, I mean ;).
Me too ;). It's just way too complex for my cooking skills (and I should write while somewhere in the oven easy pasta grills along on its merry way, *g*).
Well, probably not the fastest, but cheap and tasty:
Cook 7 oz. macaroni, drain, put into an ungreased casserole dish (~1.5 quart).
Melt 2 tablespoons of butter over medium heat, add 2 tablespoons of flour and mix until bubbly. Add 2 cups of milk and 1/2 teaspoon of salt. Heat to boiling, stirring pretty much constantly. Once it boils, stir for one more minute. Take the pan off the heat, and mix in 6 to 8 ounces of shredded cheese (I use cheddar). Pour over the pasta, mix, bake at 375 degrees F for 30 minutes.
We put chunks of bread and fresh tomato on ours. :)
Since it's exam time, I've been living off casseroles. This week, I made a macaroni and cheese that turned out quite good - and easy and cheap:
2 cups small elbow macaroni (I use whole wheat) 1 ½ cups grated smoked Gruyère cheese 2 cups 1% or skim milk 3 oz thinly sliced prosciutto, coarsely chopped (could use ham or cooked bacon) 3 tbsp. grated Parmesan cheese ¼ tsp. ground nutmeg Salt and ground pepper to taste
Position rack in bottom third of oven and preheat to 400˚F. Butter 11x7 inch glass baking dish. Cook macaroni in large pot of boiling salted water until tender but still firm to bite. Drain well.
Whisk ½ cup Gruyère, milk, prosciutto, Parmesan and nutmeg in large bowl to blend. Add macaroni and toss to coat. Season with salt and ground pepper. Transfer to prepared baking dish. Sprinkle remaining 1 cup Gruyère over. Bake until cheese melts and macaroni and cheese sets, about 20 minutes.
